112g unsweetened applesauce
30g splenda or other sweetener
425g pumpkin puree
150g nonfat plain greek yogurt
60g almond milk
5g vanilla extract
180g all-purpose flour
125g vanilla protein powder
1 teaspoon baking soda
½ teaspoon baking powder
4 teaspoons pumpkin pie spice
Combine all wet ingredients and sweetener in a bowl and mix. Combine all dry ingredients in another bowl and whisk. Combine the dry to wet ingredients and mix. Pour batter into lined muffin pan and bake for 20 minutes at least 375°F.
