7.1 ounce salmon fillet (uncooked, chopped)
7.1 ounce zucchini (spiralized)
2.5 ounce red onion (sliced)
11.0 ounce snow peas (ends trimmed, chopped)
1.6 fl.oz reduced salt soy sauce (2.5 tbsp.)
0.2 ounce ginger root (grated)
1.0 garlic clove (crushed)
0.9 fl.oz sesame oil
0.2 fl.oz extra virgin olive oil
1.0 Pinch chili flakes
0.2 ounce sesame seed

πŸ’ͺ INSTRUCTIONS - 20 Min - Makes 2 servings

1. Heat olive oil in a wok over medium temperature and sautΓ©' the onion, garlic and ginger for a few minutes

2. Mix through the zucchini, snow peas, salmon, soy sauce, sesame oil, chili flakes and sesame seeds and cook for 7-10 minutes, stirring occasionally. Season with Himalayan salt and pepper

3. Divide the meal into two serves

4. Dish one serving in a bowl, and refrigerate the leftover for tomorrow's meal.

We can all take action to improve mental health. Sometimes it's as easy as initiating a conversation and checking in with people to encourage them to get in touch with a loved one and reach out to those who may need help. πŸ™

4.6 ounce lean lamb cutlets (raw)
0.6 ounce packaged basil pesto
5.7 ounce squash (chopped)
1.8 ounce baby spinach leaves
0.8 ounce red onion (chopped)
1.1 fl.oz brown balsamic vinegar
0.6 ounce feta cheese (crumbled)
2.0 Teaspoon dried Italian herbs
1.0 Pinch himalayan salt & pepper

πŸ’ͺ INSTRUCTIONS - 45 Min - Makes 1 serving

1. Preheat oven to 350˚F and line a baking tray with baking paper. Place the butternut squash on the tray and season with Italian herbs and Himalayan salt. Bake in the oven for 30 minutes.

2. Place the lamb on a chopping board and rub the pesto on both sides. Heat a barbecue grill over medium heat and cook the lamb cutlets for 5 minutes on each side or until cooked to desired doneness.

3. Combine the cooked butternut squash, spinach, onion, and feta in a bowl. Drizzle vinegar over the salad. Dish the salad on a large plate.

4. Serve the lamb beside the butternut squash salad.

πŸ’ͺ INSTRUCTIONS - 40 Min - Makes 2 servings

1. To make the lemon herb chicken, begin first by adding the lemon juice, parsley, oregano, rosemary, olive oil, and garlic in a blender or food processor, and blitz for 20-30 seconds. Alternatively, combine the ingredients in a bowl, but ensure the parsley is finely chopped

2. Coat the chicken fillets with the lemon-herb dressing

3. Heat a non-stick fry pan over medium heat and cook the chicken for 3-4 minutes on each side or until cooked in the middle. Once cooked set aside

4. To make the cous cous salad, begin first by bringing water to boil in a saucepan over medium heat and cook the cous cous with a pinch of Himalayan salt over low heat for 10 minutes or until the cous cous expands. Remove the cous cous from heat, allow to cool

5. Combine the arugula, red bell pepper, red onion, feta cheese and cous cous in a bowl. Drizzle the lemon juice and olive oil over the top and combine well

6. Divide the lemon herb chicken and cous cous salad into two serves. Dish one serving and refrigerate the second meal for tomorrow’s leftover.
